
I love having a big bowl of African beef stew in the fridge which is great especially for those busy days. You can have the stew with any side dish of your choice. We enjoy eating our stew with boiled rice.

Warm up the stew, cook your fresh rice and there we have a complete meal! Tomato stew is such a versatile dish as you can use a variety of assorted meats or even fish. I’m going to show you the easiest way to make this delicious stew with a few ingredients. This recipe is also great if you are on a budget
INGREDIENTS
1kg meat of your choice
2 pointed red peppers
3 red bell peppers
4 big tomatoes
2 tins of plum or chopped tomatoes
2 big onions
2 spring onions
sea salt
all-purpose seasoning
1/2 scotch bonnet pepper
maggi cubesÂ
mutton seasoning
curry powder
garlic powder
ginger powder
white pepper
3 bay leaves
dried thyme
vegetable oil
METHOD OF PREPARATION
Preheat your oven to 180 degrees Celsius. Rinse your tomatoes, red peppers,1 onion, 2 spring onions, and bake in the oven for about 15 minutes. Do not forget to check from time to time to prevent peppers from burning. Once ready; blend and set aside

In another pot season your meat with Thyme, Garlic Powder, 1sliced onion, mutton powder, bay leaf, seas salt, and all-purpose seasoning. Set aside and let it cook for 30 minutes. Once the meat is cooked, set the stock aside and fry your meat as seen in the mini clip.Â

Please note to achieve the perfect stew, parboil your blended tomatoes and vegetables as mentioned above for about 15 to 20 minutes in a separate pot or frying pan. Remember all you are doing to reducing the water so you are left with just a tomatoes paste for the stew. Once your meat is fried, use the oil of the fried meat to fry the tomato paste but firstly you will need to add the remaining chopped onions.
At this stage, if you have concentrated tomatoes, you can add a tbsp of this to the pot of fried onions before adding your tomatoes paste. Let it cook for about 15 minutes and once the tomato stew is almost ready, add your fried meat and stock. Leave it to simmer for another 10 to 15 minutes then your stew should be ready at this point.Â
