cabbage stew served with plantains

Cabbage is one of those vegetables I hardly cook but when I cook it, I love to stew it ! Pairing the stewed cabbage with some boiled green plantains takes the dish to another level.

The stewed cabbage requires pretty simple ingredients. Cabbage, tomatoes, onions, red pepper, garlic and celery. I also added a tbsp of crayfish to it if for extra flavour. You can use plum tin tomatoes but will recommend fresh tomatoes. I also chopped a few fresh tomatoes.

This recipe makes an excellent balanced meal if you add some fish or chicken to it.  You could make some grilled or fried chicken which i used in the cabbage stew to accompany it.

Here are the ingredients

2 cans of plum tomatoes for blending or 6 fresh tomatoes

4 tomatoes for chopping or 2 cans of chopped tomatoes

1 whole white cabbage

2 onions

1 red pepper

1 celery

2 garlic cloves

2 maggi cubes

Tbsp of crayfish

Vegetable oil

For the plantain

Water

salt

White cabbage should be boiled before cooking

White cabbage can also be cooked with groundnuts and egusi. Very delicious and filling

Boiled plantains are optional. This dish can be eaten with any side of your choice such as potataoes, rice, yam etc

Great recipe to introduce vegetables to your kids. Serve with rice
