
Pancakes are a comforting, rich, and tasty which are a cross between crepe and American pancakes. A great make ahead breakfast filled in with either scrambled eggs, chocolate spread or jam. Pancakes can also be topped with either honey or maple syrup!
Pancakes are one of my favourites to make for breakfast as its super quick, easy to make and very filling too 👌Not a Week goes by in my household ,without making these delicious pancakes – they are my son’s favorite breakfast. Who am I kidding, they are mine too!!!- for several reasons;
Childhood memories, comfort rich taste and of course, a great make ahead breakfast – Now, tell me you like that!

I started making pancakes when I was about 13 years old , with no  precise measurements . It always had a different taste and shape each time because in my culture , all you need to know in order to cook  are the ingredients . So armed with plain flour, sugar ,eggs, milk , and oil; i embarked on my pancake venture making pancakes with pride and dedication . At the time , I love it and I knew my pancakes were  good. Trust me they became perfect and delicious over the time and I became a pancakes expert.
I love making pancakes because there is no ideal recipe as one can be very versatile with how they want the pancakes to takes and how thin or thick they will like them to be. I personally love thin pancakes as this allows me to add a filling like scrambled eggs which I absolutely adore. My favourite filling in pancakes

Fast forward to now, after making gazillion pancakes . I now have an amazing recipe , that I use most of the time , with some lessons learnt, Whisking the eggs with the sugar only before adding the milk and flour will relaxe the gluten found in flour once you add it to the egg mixture but before that add more milk for thicker pancakes and some water for light think pancakes like mine. This method will make really  light and tender pancakes . Adding cinnamon or  nutmeg and melted butter  which is optional will add more flavor to pancakes.

These delicious pancakes are a cross between crepes and  American pancakes – not too thick as american pancakes and not as thin as crepes. They are comparable to South African or Swedish pancakes , I call them  African pancakes because to be honest , there is no  name for it , other than pancakes . This is the pancake I know  from  Cameroon , West Africa, where I grew up, with slight variations. I can’t seem to get anything like  this in restaurants or maybe it is just comfort food to me , one that has to be homemade.
Deck it up with your favourite filling however you like it, maple syrup, honey, jam, chocolate spread or scrambled eggs . My preference if I dnt have it with chocolate spread, scrambled eggs then some fresh fruit on the side and a hot cup of chocolate 👌
Notes

For lighter pancakes use 1 cup milk and 1 cup water  instead of 1 1/2 cup milk. If you make a mistake, just add 1 /2 a cup of water for thin and crispy pancakes.
Ingredients
2 cups of flour
1 cup of milk
1 cup of water
1 /2 cup of sugar
Pinch of cinnamon or nutmeg
2 tbsp vanilla extract optional
Vegtable oil for frying. A little goes as you do not want to end up with oily pancakes
Kitchen paper tissue for draining the excess oil
Method of preparation
Add the 2 eggs and sugar into a large bowl, whisk or beat the eggs and sugar together until nearly foamy. Add the vanilla essence, milk then water and mix together either by hand or with a mixer. Add the flour , cinnamon mixture until everything has been incoporated .

Heat a skillet or a non stick frying pan then lightly coat the hot pan with vegetable oil, cooking spray, or clarified butter.Then pour about a 1/2 cup of batter depending on your fry pan or skillet. Tilt pan so the batter spreads across the bottom of the pan. Cook the pancake for about 2 minutes, until the bottom is light brown.
Lift with a spatula, turn and cook the other side. Serve hot on its own or with any filling of your choice.
