
Egusi Soup with spinach or bitter leaf is a finger-licking Nigerian soup made with pumpkin seeds also known as egusi. It is spicy, nutty with an exotic African flavor!
WHAT IS EGUSI SOUP MADE OF ?
It is a soup made out of pumpkin seeds which can be found in any African, Asian store. Ground egusi (or pumpkin seeds) is the main ingredient.
Other ingredients include crayfish, any meat of your choice, fish, red peppers especially if you want your soup to have that rich flavor, spinach.
I would also recommend bitterleaf for this dish.
This dish is a Nigerian classic enjoyed in various forms across the country.Â
Egusi is enjoyed in various ways in West Africa.

METHOD OF PREPARATION
1: Boil the meats and/or fish you intend to use.
 2. Grind the egusi. I advise that you always buy whole egusi seeds and grind them yourself. That way you are sure of the quality of the seeds. Pre-ground egusi is not always the best and sometimes can have some sand in the premade packs
3 Fry your red onions in red palm oil, cook egusi in red palm oil then add the boiled meats, crayfish, seasoning, and meat stock.
4. Serve with pounded yam, Garri, fufu, rice, boiled yam,or any side of your choice
