Gizdodo/Gizzard and Plantain

Gizdodo is a simple side dish that is often served with rice; especially Jollof rice.

It is easy to deduce from the name that I will combine gizzards and ripe plantain in this recipe.

Hence Gizdodo (Gizzard Dodo) and we all know that dodo is just another name for ripe plantain.

It makes perfect sense right? I don’t know who actually coined that word but I think it is epic!

Ripe plantain is called dodo in Cameroon and also Nigeria. Plantains are very versatile and can be used to cook porridge. In that case, it would be porridge plantain. But when you fry unripe plantain, it is called kpekere in Nigeria. Plantain chips is another favourite recipe as a snack. That aside. Let’s get the recipe for Gizdodo

Gizdodo Ingredients.

1kg Chicken Gizzards

6 Ripe plantains

1 Red bell peppers

1 tin Chopped tomatoes

1 Scotch bonnet pepper ( optional )

3 large red onions

2 Yellow and red bell peppers chopped

3 Spring onion chopped

1 cup vegetable oil

Chicken seasoning

3 Maggi cubes

Basil

Rosemary

1 tbsp Ginger powder

1 tbsp Garlic powder

Extra Vegetable oil for frying plantain (400ml)

The actual recipe for Gizdodo takes 150ml of vegetable oil. The extra oil will be used for frying the ripe plantain.

Preparation

Start by peeling off the back of the plantain and chopping to smaller bits with a kitchen knife. Slice the tomatoes, peppers, and Onions as seen here.

How to Cook Gizzards

There is really nothing special about cooking gizzard, you just want it soft and tasty so you can use the same technique employed when cooking chicken or beef.

Step 1

Wash the gizzards with hot water and precook for 20 minutes. Use a seasoning cube, half teaspoon of salt and half cup of sliced onions.

Step 2

Check to see that the gizzard is soft and chop to smaller bits.

These are some of the needed ingredients. What you find at top-right is the chopped ripe plantain. Chopped gizzards at the bottom-right, then sliced tomato, onions and green beans in the plate at the left corner.

How to make Gizdodo

Step 3

Fry the plantain with 400ml of vegetable oil until it turns golden, scoop into a sieve and allow it to sit for a while.

Step 4

Reduce the oil to 150 ml and fry the chopped gizzard.

The gizzard would be dark-brown when it is properly fried.

Step 5

Remove the gizzards when it is fried and pour in the remaining half cup of red onions, chopped peppers, spring onions stir and add the chopped tomatoes.

Step 6

Add the chopped ingredients and allow it to fry for 10-15 minutes. Remember to stir occasionally so it doesn’t get burnt.

Step 7

Once the tomato is properly fried, you are almost done with making gizdodo. Add one seasoning cube to taste.

Step 8

Transfer the fried gizzards, plantain, and sliced green peppers.

Add a pinch of salt.

Stir all together and taste for salt.

Allow to simmer for 3 minutes then serve hot.

That is just how to make gizdodo. Sound simple right?
