
Tender and Delicious Jerk Lamb prepared with a wonderful blend of spices and roasted to perfection. I enjoy the taste of lean meat that is well spiced. Over the years, I have created tons of lamb recipes. Each recipe tastes differently depending on the seasoning and the cut of the lamb. Make the right seasoning choice Choosing the right spices and herbs is as crucial as selecting the right “vinegar”.
I always make sure I have a jar of wet jerk seasoning, or I make my own dried jerk seasoning spice. Jerk seasoning is a valuable spice to have in your pantry or refrigerator. If you don’t have jerk seasoning, you can use Noubess Hot and Spicy Sauces. The dish will be hot and spicy as if you had to use regular jerk seasoning but the woody and smokey flavor from the jerk seasoning won’t be present.
Advanced preparation is important. The marinade for the meat can be prepared ahead of time by marinating the lamb in advance for lots of bold flavors.Very simple, very easy! Try Jerk Lamb either roasted in the oven or grilled. I follow the same process, and it is always delicious. You may pre-cook the meat before grilling if preferred, but I find it to be very flavorful when cooked straight in the oven or grilled. This recipe is also ideal for lamb kebabs.



GREEN MARINADE FOR THE LAMB CHOPS

Method of Preparation
wash and clean your lamb with lemon. Lemon helps to remove bacteria and adds flavor to the meat. Once clean, marinate with 1 tbsp jerk spice ( paste or powder), 1 tsp garlic powder, 1tsp paprika, 1 tbsp all-purpose seasoning, 1/2 tsp sea salt, 1 tsp brown sugar and set aside
For the rest of the marinade, blend 2 spring onions, 2 garlic clove, 1/2 fresh ginger, 1 tsp pimento seeds, 2 tbsp vegetable oil, 1/2 scotch bonnet pepper. Add this mixture to the bowl of lamb that you have marinated and set aside in the fridge for 35 to 40 minutes. Place the lamb on an oven rack and grill for about a 1 hour turning from side to side. use the remaining seasoning of the lamb and cook on low heat as a gravy. I used the vegetable oil from the gravy sauce to brush on the lamb.
Top tip: Remember to add a little bit of water to your oven rack pan before placing the lamb chops on the rack. This will prevent the lamb from sticking on the rack.
Serve immediately with your favorite side dish.
